Turkey Stuffing Skillet

This is just a little something I whipped up for dinner the other night.  It was SO GOOD!  I was so excited because there was some leftover that I was going to eat for lunch the next day, but apparently the hubby got hungry again and ate it all!!  I was so stinkin’ mad lol!  I just used some turkey that I had in the freezer already cooked ( I like to cook a whole chicken or turkey, then portion it up in baggies in one meal size portions, very handy…), you could substitute chicken though.  Also, we are a cheese lovin’ family, but if you notice, this has just a bit.  You could add more, but it really is kind of perfect the way it is.  I’ve been watching for stuffing mixes to go on sale, and I’m grabbing them when they do!  This is definitely going into the meal rotation!

Turkey STuffing Skillet

1 box chicken flavored stuffing

Water and butter needed for stuffing mix

1 onion, diced

2 cups diced turkey, cooked

2 cups chicken broth

1 can cream corn

2 potatoes, peeled and diced

1 cup shredded cheese

2 tsp creole seasoning

2 tbl veggie oil

Heat your oil in a skillet, add your onions and potatoes.  Saute until soft, seasoning with the creole. 

Add turkey to skillet.  When it is heated through, add broth and can of cream corn.  Cook down until it makes a kind of ‘gravy’. 

While that is cooking, prepare your stuffing as directed.

Mix your stuffing and turkey mixture together.  Stir the cheese in at the last minute.  Serve!
