Oh. My. Goodness. Where to start on these?? Well…if you want a piece of chocolatey peanut butter goodness, then make these. They were super easy, super cheap, and were totally addicting!! I found the recipe of Pinterest while I was looking for ideas on what to make for our Cookies by the Pound fundraiser that we had for the preschool board that I am on. Basically what it is is every board member made like 10 dozen cookies (sounds like a lot, but it’s totally not!), candies, jellies, etc, then we set it up on tables on pretty serving trays and people come in, get a styrofoam to go container and a glove, and they pick out the cookies that they want! Most of them freeze pretty well, so we always do it at the beginning of December so everyone can use them for Christmas parties! Anyway, you pay by the pound (we do $5)! It’s a fun fundraiser and is really popular. We always sell out of pretty much everything!
So anyway, I knew I wanted to make something delicious, but it needed to be easy and not very time consuming since I wasn’t going to have a lot of time to devote to it. All you need for these are a box of brownie mix (I think I paid $1.50 for mine), a bit of peanut butter, and some chocolate/peanut butter chips.
A few things I want to note- I used a Mocha brownie mix from Pillsbury and the batter was crazy coffee-y and I was worried that it would affect the flavor of the peanut butter. I was wrong. It was SO GOOD! I would definitely reccomend getting that mix!!
I also took the leftover peanut butter and drizzled it all over the top (sorry, didn’t take a picture). It made for an easy, pretty presentation and helped distinguish them in a sea of other yummy cookies. They were gone in absolutely no time at all, so apparently other people thought they looked good, too!!
My bites didn’t collapse like the recipe said it would, so I just found something in my silverware drawer that would make an indentation in them. Don’t use your finger! It’s hot. I know.
