This recipe seems almost ridiculously easy, but I thought I would post it anyway. Banana Waffles are an easy, delicious, and (kinda) healthy breakfast that anyone can make. I’m not the best at making pancakes. Actually, I totally suck at making pancakes, but I can rock out some waffles! I think it’s because it has a red light that comes on when they are done, lol. Pancakes get too dark too fast and the inside never seems to be all the way down, plus I think the texture of waffles are definitely better :-). This is also a good way to use up bananas that are about to go bad. Or the stock of bananas you have in your freezer waiting for banana bread that never gets made…right? Oh, that’s just me? Oh well, it’s still good! Here it is….
3 Cups instant waffle mix
2 Cups water or milk
2 bananas, cut up into small chunks and mashed with a fork
1 teaspoon vanilla extract
1/4 teaspoon cinnamon (optional)
Heat up your waffle maker and spray with a little Pam. In a medium bowl, combine waffle mix, bananas, cinnamon, and vanilla. Start adding in a little milk at a time until it is completely moistened and can be poured. You don’t want to stir it too much, but you don’t want a lot of dry spots either. Pour about 1/2 cup of batter into waffle maker and cook until done (my light comes on). Pull off and slather some butter and syrup all over it and enjoy!
If you have leftover waffles, stack them between sheets of wax paper and freeze in a ziploc bag. You can put them in the microwave or toaster to heat them up and they make a great quick breakfast.
