So since we were snowed in and could not get to the grocery store tonight…I had to scrounge something up from the things in the fridge. Luckily for me, we had had a bingo fundraiser this weekend that I/my mom had made some chili for and had some leftovers. I used the leftover tortillas from the nachos and whipped these up. C was pretty much drooling and it was soooo easy, cheap, and definitely yummy! The bacon and the carmelized onions were probably my favorite part. I think that this could definitely be tailored to whatever you might have in your fridge. Some guacamole would be yummy, or some sour cream (mine seemed a little funky…although the fact that it expired in October should have tipped me off!) just whatever you think! I think that this would definitely be a good ‘guy’ food too, like for the Super Bowl next weekend. If you don’t have leftover chili, I know that you can buy it in a little jar or a can and it would be just as yummy. Here is my ‘recipe’ for these nachos. Enjoy!!
Chili Cheese Nachos
Onions, sliced thinly
Cook bacon in skillet until very crispy, remove from pan. Add alittle more oil if needed and add your sliced onion. Cook over medium heat until very soft, adding salt and pepper. When they are soft and have sweated out a lot of their juice, sprinkle a tablespoon or so of sugar on top and let that melt and cook for a few minutes more. Remove from heat.
Spread nachos on a baking sheet or oven proof plate, sprinkle liberally with shredded cheese. Spoon some of your heated chili over the top of the cheese, then the onions and the bacon. Place under broiler until all the cheese is melted and yummy! Top with whatever sounds good…guacamole, sour cream, maybe even some sliced green onions and eat!
