So I found this recipe somewhere (not sure where) and got it out tonight to try it out. I am always looking for ways to cut costs and I had everything on hand for this so it was like it was free! This dough is sooo yummy that I will be keeping it out and using it for all of my doughy needs. So without further ado…
Breakfast Hot Pockets
9 Cups flour
1/2 Cup sugar
4 1/2 tsp yeast (this is two of the little packets and I used instant)
1 1/2 cups milk
1 1/2 cups cold water
1 tsp. salt
2 sticks melted butter
Put 9 cups flour in a large bowl, making a well in the center.
In another bowl, scald milk in microwave for 3 minutes. Then add water.
In a separate bowl, beat eggs, then add cup sugar and the yeast.
Pour milk and water into egg mixture, stirring as you add it. Add salt and mix well.
Pour this mixture into well of flour in the large bowl. DO NOT STIR! Cover and let sit for 45 minutes.
After 45 minutes, add 2 sticks of melted butter and mix well. Cover and let sit for 1 hour. Now you can use your dough to make your hot pockets (or pizza or breadsticks or or or)
2 tablespoons butter
1 roll breakfast sausage
2 cups shredded cheese
1 half onion, chopped
1 green bell pepper, chopped
While you are waiting on the dough to rise you can make your breakfast mixture. Cook sausage over medium heat until cooked through. Remove from pan and into a bowl, leaving as much of the drippings as you can. Add butter if needed. Add onions and bell peppers and saute until soft. Remove from pan and add to the bowl. Add more butter if needed and add beaten eggs. Cook until done and then add that to the bowl too. Put cheese in bowl and mix thoroughly.
To make hot pockets:
Pull of a small round of dough, about the size of a golf ball. Using very little flour, roll out dough into a square and add about 1/2 C of the egg mixture. Fold sides over to completely cover filling, pinching the dough as needed. Place on cookie sheet or pizza stone and repeat with remaining dough. Spray pockets with cooking spray or brush with oil. Let pockets raise for about 30 minutes before baking them in a 350 degree oven for 20 minutes or until golden brown. Cool completely, wrap in foil and freeze.
This recipe made about 25 good sized hot pockets.
**Switch up the fillings to anything that sounds yummy….pizza sauce, cheese pepperoni,onions and peppers

Broccoli and cheese
Chicken and broccoli
